Apricot Pecan Bites Vegan Recipe

This quick recipe takes about 10 minutes to complete. These are a healthy vegan snack good for any time of the day and has the taste of a dessert. Raw foods allow for more access to nutrients, untainted. The following recipe is good for about 7 small balls, but you can modify to your preferences. You will need a food processor.


1.5 cup of Organic Pecans

2.5 cups of Dried Apricots

2 tsp. of Avocado Oil (or coconut oil)

Coconut Shreds (distributed as you prefer)

1 tbs. of Chia Seed (antioxidants!)

Sprinkle of Sea Salt

Step 1: Mix the nuts alone in the food processor for at least a minute. Should be partially fine grated for use (pictured).

Step 2: Add the oil, apricots and sea salt to the food processor for at least 90 sec.

Step 3: The mixture should be ground and moist enough to use your clean hands to form small balls (pictured). Once the balls are formed and plated, roll the balls into shredded coconut (or sprinkle on top) as you see fit.

If you've added larger measurements than listed, make sure you adjust the oil so that the ingredients stick (form balls). Can be eaten at room temperature but best taste after refrigeration of 30 minutes. These bites are good in the fridge for up to 2 weeks.
